HISTORICAL HEARTH COOKS DEMONSTRATION “ONIONS” Planting gardens in the backcountry during the late 18th century was very important, as what was planted. Vegetables that could be saved during the winter months were planted and stored for food in the winter. One of the frequently planted but often overlooked vegetable is the onion. We will discuss the history of the onion in the backcountry and prepare 3 simple receipts with onion as one of the main ingredients. Receipts will include a ramequin of cheese, baked onion and a simple onion soup.
